Prediabetes Thanksgiving SoupHere’s the recipe for one of my favourite soups – just in time for Thanksgiving.

Sweet Potatoes
– Did you know that sweet potatoes are higher in fiber, higher in nutrients and are lower on the glycemic index?  Perfect for anyone with blood sugar issues.

Coconut Sweet Potato Soup – Island Style

2 tbsp.Coconut oil
1 small onion (peeled and chopped)
1 garlic clove
2 large sweet potatoes (peeled and chopped)
3 cups vegetable stock
1 tbsp Ginger root, grated
1 tsp allspice
1 tsp nutmeg
½ can coconut cream
  1. Using medium heat, add the coconut oil to your pot.
  2. Add the onions and garlic and sauté for 3 minutes.
  3. Add the sweet potatoes & beet and cook for 5 minutes.
  4. Add the vegetable stock, ginger, allspice and nutmeg and cook until the vegetables are tender.
  5. Puree using an immersion blender, food processor or blender and transfer back to your pot.
  6. If mixture is too thick, add additional stock or water.
  7. Stir in the coconut cream.  Taste and adjust seasoning if necessary
  8. Serve and enjoy.
